Mom's Rice Pudding Recipe

1/2 c. uncooked rice
3 c. boiling water
1/2 tsp. salt
1/2 c. each coconut and raisins
1/4 c. margarine (this just seems wrong- how about butter?)
1 1/2 tsp. vanilla
15 oz. sweetened condensed milk

Directions:
Directions:
Put rice, boiling water and salt into top of a double boiler. Cook uncovered over rapidly boiling water until rice is tender- approx. 40 minutes. Allow to cool a little before stirring in milk, margarine, raisins and coconut. Cook over boiling water, stirring frequently until slightly thickened- about 20 minutes. Remove from heat and stir in vanilla. Place in serving bowl or individual serving dishes. May be served warm or refrigerate and serve cold.
