3 green (or any color) peppers
1 lb. ground beef
1 c. cooked rice
1 egg
1 1/2 tsp. salt (to taste)
1/4 c. Parmesan cheese
1 8 oz. can tomato sauce
seasoned bread crumbs
large pot of boiling water, once at a boil, reduce to a simmer

Directions:
Directions:
Slice peppers in half lengthwise. Clean, discarding seeds and ribs. Place in boiling water, salted water and simmer for 5 minutes. Drain. Gently mix next 5 ingredients, add 1/3 c. tomato sauce. Fill pepper shells with meat mixture and place in baking dish. Top with remaining tomato sauce and sprinkle with desired amount of bread crumbs. Bake at 350º- 40 -50 minutes
