1 9 inch unbaked pastry shell
1 cup coconut
3 eggs
1 14oz Sweetened Condensed Milk
1 1/4 cups hot water or coconut water
1 teaspoon vanilla
1/4 teaspoon salt
1/4 -1/2 teaspoon ground nutmeg

Directions:
Directions:
Preheat oven to 425º. Toast 1/2 cup coconut or all if you desire.
Bake pastry shell 8 minutes then cool slightly. In a med bowl, beat eggs. Add sweetened condensed milk, water, vanilla, and nutmeg. Mix well, stir in 1/2 cup coconut. Pour into prepared pie shell. Sprinkle with remaining coconut. Bake 10 minutes, reduce heat to 350º, bake additional 25-30 minutes until set in the middle. Cool.
