Lunenburg Fish Chowder Recipe

1 lb haddock or flounder filets (remove any bones)
2 tbsp margarine
1 medium sliced onion
1/2 cup diced celery
2 cups diced raw potatoes
1/2 cup sliced carrots
2 cups of boiling water
1 tsp salt
1/4 tsp pepper
1 cup of whole milk

Directions:
Directions:
Cut filets into; cook onion and celery and carrots until tender and translucent. Add potato, carrots, water, salt and pepper; cover and simmer 10-15 minutes until vegetables are tender. Add fish and cook for 10 minutes longer. Then add milk and reheat, add a tsp of butter. At this point DO NOT BOIL - REHEAT ONLY. Serve hot with Italian bread or small rolls.
