1 18.5 oz pkg yellow cake mix
1/2 (1 stick) lightly salted butter, at room temperature
2 cups sifted confectioners sugar
1 Tbsp vanilla
2 sq (2oz) unsweetened chocolate, melted with 3 Tbsp. water and cooled
3 Tbsp strawberry preserves
1/2 tsp lemon juice
2 drops food coloring (optional)
Decorative candies and candles

Prepare cake mix according to pkg directions. Bake in 2 8" sq pans and cool according to pkg directions. Only 1 cake is required for an 8-car train. Cut the cake into 4 8 x 2" rectangle's. In a bowl beat butter until pale and fluffy. Beat in confectioner's sugar and vanilla. Scrape half the mixture into another bowl. Stir melted chocolate into 1 bowl. Add the preserves, lemon juice, and food coloring to the other bowl. Frost 4 of the cakes with chocolate frosting and 4 of the cakes with strawberry frosting. Arrange on a large tray. Decorate each train car with candies using your imagination (licorice for coal, etc). Attach licorice for couplings. Can be made a day in advance and refrigerated.

I made this for Bill's 4th birthday. It took absolutely forever to make, but was so worth the effort. It was a huge hit!
