3 cups of cooked rice
2 cups of sour cream
2 to 3 cups of shredded Monterey jack cheese
1 can of chopped mild green chilies
1/4 shredded yellow cheese (optional)

Directions:
Directions:
Cook rice by preferred method. If you like, add a small amount of butter and/or salt and pepper. In a large bowl or pan, add rice, sour cream, shredded cheese, and drained green chilies. Mix well.
Put mixture in casserole dish that has been buttered or sprayed with cooking spray.

Heat through in microwave oven OR

Cook 30 minutes in 350º oven.

Optional: While still hot, sprinkle yellow cheese over top for color. Allow to melt.

Varies by method. Can be as fast as ten minutes or as long as 40 minutes.

This recipe was originally written so that there were layers of rice, sour cream/chilies, and cheese. It tasted good, but the rice got dry and the cheese got rubbery. I find it works best just to mix everything together. Don't overcook - just heat it up and melt the cheese. To reheat leftovers, add a little water, then microwave or bake.
