Standing Rib Roast 4-5 lb.or 3 rib 7-8 lb
1 T salt 1 1/2 t pepper

Celery Ribs
Carrots
Onion
Fingerling potatoes

Directions:
Directions:
Oven to 500. Oven rack low.Pan bone side down and spread with salt and pepper. If using,
Cut veg and put bottom roast pan (spray first).
Roast in V rack over veggies after salt and pepper for 10 min.
Reduce oven to 200 and cook for 3-4 hours. Internal temp 120 for med rare 135-140 med.
Transfer to cutting board, cover with foil and let stand 15-20 min before cutting.
Use pan drippings, stock, wine to reduce for sauce.บบบบบบบ

Could make herb crust for roast with garlic, mustard, mayo, horseradish, parsley, thyme.
Make paste and add to roast when cooking at the lower temp.
