3 T. Olive oil
2-3 onions chopped
1 T. sugar
3 T. minced garlic
2 t. salt
1 t. pepper
2 t. dried basil
1 1/2 t. dried oregano
1 t. dried thyme
bay leaf
1/2 t. fennel seeds, crushed
2 T. balsamic vinegar
2 c. chicken broth or wine
3 cans crushed tomatoes 28 oz
Tomato paste
optional mushrooms, parsley

Lg Dutch oven heat oil over med heat. Cook onion for 4 min stir often. Add sugar and ingred thru fennel. Cook 3-4 min stir constant. Stir in vinegar and cook 30 sec. Add broth and tomatoes and other ingred, bring to simmer. Cook over low heat for 55 min or until thickens. Stir occ.
If freeze any sauce, add 1 t. balsamic while reheating to freshen.
