600 g potatoes
4 chorizo sausages (hot or wine chorizo)
1 garlic clove
1 onion
2 tbs olive or grapeseed oil
900 ml home made or vegetable broth
1-2 tbs heavy cream (coconut cream)
salt & pepper

Directions:
Directions:
Wash, peel and cube potatoes.
Take skin off chorizo sausage (if possible)
Slice thinly and fry in small amount of butter.
Set aside.
Fry onion and garlic in chorizo-fat until opaque.
Add potatoes, toss to coat with oil and garlic.
Fill up with broth and simmer for about 20 minutes.
Puree, fold in the cream and parsley. Top
with chorizo slices. Enjoy, it's simple but tasty!
