1 1/4 cup diced bacon
1/2 cup finely chopped onion
2 lb Kale, trimmed and chopped
1 cup water
tbsp prepared spicy brown mustard
1/2 tsp salt
1/4 tsp ground red pepper
1/4 tsp sugar
1 tbs vinegar

In large sauce pot, fry bacon over medium heat.
Drain on paper towels. Reserve 1 tbsp of the bacon drippings in sauce pot. Add onion to sauce pot. Cook stirring occasionally, until soft about 5 minutes add kale to sauce pot. Cover and cook 3- 4 minutes until greens begin to wilt. Add water, Bring to a boil. Cover and boil 15 minutes or until tender. Drain liquid from sauce pot. Gently stir in bacon. mustard salt, red pepper and sugar until well blended. Just before serving stir in vinegar
