4 to 6 medium potatoes
1 small onion
2 eggs
1/2 c. flour
1 t. baking soda
1 1/2 t. salt
1 t. dried parsley
1/2 t. black pepper

Directions:
Recommend using Russet or Yukon Gold potatoes.
Scrub potatoes, peel if desired, or cut away any blemishes. Cut into smaller pieces, 1 inch or so size. Small onion cut into smaller pieces, may want to use a few green onions for a little color. With food processor (we use the Magic Bullet), process into smooth mixture. Put the mixture into a screened dish or colander to drain off most of the liquid.
After draining off liquid, put mixture into a bowl, add eggs, salt, pepper, flour, parsley and baking soda. Stir until well mixed.
Cover bottom of fry pan with cooking oil, bring to medium high heat and drop in potato mixture by heaping tablespoon. Spread out to size and thickness desired. When browned on one side, flip to brown on other side. Remove and place on paper towel to drain any excess oil.
Serve with sour cream or apple sauce or any topping of choice.
