11/2 cups short-cut macaroni
3 tbsp butter
4 leeks, chopped
5 tbsp whole wheat flour
3 cups milk
2 cups grated, sharp Cheddar cheese
3 tbsp fresh breaded whole wheat crumbs
salt and pepper

Pre-heat oven to 400F. Cook macaroni in salted water for 8 minutes. Drain well.

Melt butter in a saucepan, add the leeks and cook, stirring occasionally, for about 4 minutes. Stir in the flour, cook for 1 minute, then remove the pan from the heat.

Gradually stir the milk into the pan, then return to the heat and bring to a boil, stirring. Simmer for about 3 minutes.

Remove from the heat and stir in the macaroni and most of the cheese, and season to taste. Pour the macaroni mixture into a baking dish. Mix together the breadcrumbs and the remaining cheese, then sprinkle over the dish. Bake for 20-25 minutes, until the topping is golden

This was a staple in our house for a while when the girls were going through their junk food stage. They loved this dish and I was able to smuggle in some veggies even when they didn't want to eat anything healthy. This was a good alternative to the Mac and Cheese from the box. Luckily this food phase was fairly short lived :-) I wonder if they even remember this dish?
