4 oz butter or margarine
6 oz sugar
6 oz plain flour
2 tsp baking powder
2 large eggs
1 pinch of salt
4 tbsp Milk
finely grated rind of one large lemon

Topping:
2 tbsps powdered sugar
juice of one large lemon

Directions:
Directions:
Heat oven to 375º. Line a greased loaf pan with wax or parchment paper. Beat all ingredients together for 3 minutes or until well blended. Pour into prepaared baking pan and smooth top.
Bake for 30 to 45 minutes until cake tester comes out clean.
While cake is baking, prepare the topping:
Mix powdered sugar and lemon juice together until smooth. When cake is done, place on cooling tray and make holes in top with a fork or sharp pointed knife, pour prepared topping over cake making sure that it soaks into the cake.
Allow to cool on wire cooling rack.
