Lou's Cinnamon Rolls Recipe

1 qt. whole milk
1 c. vegetable oil
1 c. sugar
2 pkgs. active dry yeast
9 c. all-purpose flour
1 heaping t. baking powder
1 scant t. baking soda
1 T. salt
FILLING
2 c. melted butter, more as needed
1/4 c. ground cinnamon for sprinkling
2 c. sugar, more as needed

1. For the dough, heat the milk, vegetable oil, and sugar in medium sauce pan over medium heat; don't boil. Set aside & cool to luke warm.
2. Sprinkle the yeast on top of milk & let sit for 1 min.
3. Add 8 c. of the flour. Stir until just combined, cover with a clean kitchen towel, & set aside in a relatively warm place for 1 hr.
4. Remove the towel and add the baking powder, baking soda, salt, & remaining 1 c. flour. Stir thoroughly.
5. Remove half the dough from the pan. On a floured surface, roll the dough into a large rectangle, about 30 x 10 inches.
6. Pour 1 c. of melted butter over the dough. Spread the butter evenly.Sprinkle half the cinnamon and 1 c. sugar over butter.
Roll the dough tightly toward you. Pinch the seam together.
7. With a sharp knife make 1 1/2-inch slices.
Coat pie pans with melted butter and place the sliced rolls in the pans.
Preheat oven to 375 ºF.
Cover rolls with kitchen towel and let rise for at least 20 minutes.
Remove towel and bake for 15 min. until golden brown.
Top with icing of your choice. Cream cheese icing is fabulous!

Lou Hinderliter is Danny's wife and was Doc & Dorthy's daughter-in-law. Doc, my Daddy, loved Lou's cinnamon rolls and each and every time Lou had some about ready to come out of the oven, there'd come a knock on the door, with Mother and Daddy waiting on the steps. As Lou opened the door, Daddy would grin and ask, "Are the cinnamon rolls 'bout ready?" Lou was at a loss as to how Daddy also knew she was baking! After several times, she finally got up the courage to enquire. Daddy was very surprised, and exclaimed, "Why Cody (who was then around 5) always calls and say, "Mamma's making cinnamon rolls. Better come on out." Didn't you tell him to call?" Mystery solved!
