4 white baking potatoes
1 chopped onion
1 stick butter
1/4 tsp cayenne pepper
3 tsp salt
2 tsp pepper
1 1/4 c grated sharp cheddar cheese

Directions:
Preheat oven to 450º. Scrub potatoes, dry and pierce with a fork. Bake for about 1 hour on rack without foil. In a skillet, cook onion in butter until transparent and tender. Halve potatoes lengthwise and scoop out pulp, leaving shells intact. (Do not turn oven off.) Mash potato pulp; add cayenne, salt, pepper, onions with butter and cheese. Beat in enough milk to make a fluffy consistency. Fill 6 - 8 of the shells, piling high. Bake until tops are lightly browned.
