1 tbsp butter, softened
3 eggs
1 1/2 c sugar
1 1/2 c pumpkin
1 c + 2 tbsp oil
1 1/2 tsp vanilla flavoring
2 1/4 c flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp salt
1 1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
3/4 c chopped pecans

Preheat oven to 350º. Grease two 1-lb loaf pans with 1 tbsp butter. Beat eggs and sugar. Add pumpkin, oil and vanilla, mixing well. Sift flour, soda, baking powder, salt and spices. Add to pumpkin mixture and beat. Stir in pecans. Bake for 1 hour, or until tests done.
