1 tbsp. vegetable oil
1 onion, diced
2 cloves garlic minced
1 c. kielbasa sausage, 1/4” dice
1 lb. lean ground pork or chicken
2 ribs celery, finely diced
½ green pepper, diced
½ red pepper, diced
¼ tsp. cayenne pepper
¾ tsp. dried oregano
1 ¼ c. parboiled white rice
2 ¼ c. chicken stock
6 large (or 12 medium) shrimp, peeled and deveined
salt and pepper to taste
4 green onions, thinly sliced
2 tbsp. finely chopped parsley

In a large skillet or wok, heat oil over med-high heat. Cook onion until soft and light golden. Add the garlic and sausage and cook until sausage starts to brown. Add the ground meat and cook, stirring constantly until the meat is no longer pink. Add the celery, green and red pepper, cayenne, oregano, rice and broth. Bring to a boil. Reduce heat to low. Cover and cook for about 12 min. When rice is almost cooked, add shrimp. Cover and cook for another 5 min. until shrimp is cooked through and rice is completely cooked. Season with salt and pepper to taste. Stir in green onions and parsley. Serve immediately. Serves 6
