Berliner Goulash Recipe

2-3 pounds of quality beef
2 lg onions, 2-3 rashers of bacon (optional)
3-4 garlic cloves
1 box beef broth
1pk brown button mushrooms
1/2 tbs thyme fresh, pinch of dry rosemary
1-2 small tomatoes
1/2 to 1 cup red wine
1 tbs celery salt (close to the German herbsalt)
1 tsp black pepper maybe old bay spice later
More broth or water if needed
Flour to roll the beef cubes in.

-Cut beef in bite size cubes
-Cut onion& bacon small and they will disappear
-Crush or slice garlic cloves
-Quarter mushrooms and tomatoes
-Measure red wine (use the wine you will drink)
-Measure thyme & rosemary

Fry bacon til crisp, add onion & garlic
add mushrooms and tomatoes last.
Take large pot of the stove and set aside.

Heat a large and deep frying pan.
Roll all beef cubes in flour and fry until brown.

Put on a plate while frying the rest of the meat.
Only one layer of meat at a time.

After the last batch is browned, add the meat to the onion/bacon/mushroom base, in the lg pot.
Toss all ingredients for a couple of minutes on
medium heat, then add the red wine.

Gently scrape all the bottom bits from the pot to
join the meat. Pour some beef broth into the frying pan and loosen the beef/flour to add to the large pot. Fill the pot up to the 3/4 with beef broth,
Now add the thyme & rosemary.
Simmer at 350 covered in the oven for 1-2 hours.
Check the tenderness of the meat and adjust
the seasoning.

Serve with steamed vegetables and potatoes or
the noodle of your choice (we like red cabbage with it)
