1 tbsp bacon drippings (or oil)
1 c flour
1 c yellow cornmeal
1/4 c sugar (heaping)
4 tsp baking powder
1 tsp salt
2 eggs, slightly beaten
1 c milk
1/4 c oil

Directions:
Directions:
Preheat oven to 425º. Grease a 10-inch iron skillet with bacon drippings. Sift dry ingredients in a bowl. Stir in eggs, milk and oil, stirring until just smooth. Do not overmix. Pour into prepared skillet and bake for 20 - 25 minutes or until golden brown. Serve hot with softened butter.
