2 c leftover Herbed Mashed Potatoes
2 c bread crumbs, divided
1 egg, slightly beaten
1 tbsp dill weed
1 tbsp chopped fresh chives
1/2 tsp salt
1/2 tsp pepper
3 tbsp lemon juice
1/2 c butter, divided (oil may be substituted)

In a large bowl, combine potatoes, 1 c of bread crumbs, egg, dill weed, chives, salt and pepper. Shape mixture into 3-inch patties. Dredge remaining patties in reserved 1 c bread crumbs. In a large non-stick skillet, melt half of butter over medium heat. Fry patties 2 - 3 minutes per side, or until golden. Add remaining butter (if needed) and fry remaining patties. If using oil instead of butter, pour just enough oil into preheated skillet to cover bottom to 1/4-inch depth.
