1/2 c mayonnaise
1 tbsp Dijon mustard
1 tbsp prepared horseradish
8 slices sourdough bread
2 c arugula (or other dark green of choice)
8 slices cooked brisket
8 slices provolone cheese
1/4 c butter, softened and divided

Directions:
Directions:
Preheat griddle or non-stick skillet to medium-low heat. In a bowl, combine mayonnaise, mustard and horseradish. Spread over 1 side of each bread slice. Top half of prepared bread slices with arugula, brisket and cheese. Top each with remaining bread slices, mayonnaise side down. Spread 2 tbsp butter evenly over tops of sandwiches. Place sandwiches, buttered side down on heated griddle. Spread remaining 2 tbsp butter on top of sandwiches on griddle. Cook sandwiches 4 -5 minutes per side, or until golden brown. Serve immediately.
