5 lb Yukon Gold potatoes, cut into 1-in chunks
1/2 c butter
1 c sour cream
2 tbsp minced green onions (or chives)
1 tbsp chopped fresh parsley
2 1/2 tsp salt

Directions:
Directions:
In a large pot, cover potatoes with water and bring to a boil. Simmer for 10 minutes, or until tender. Drain potatoes and return to pot. Add butter, sour cream, onion, parsley and salt. Mash with a potato masher to desired consistency.
