1/2 c butter, softened. + 1 tsp for pan
1 c sugar
1/2 tsp salt
2 eggs
1 tsp vanilla flavoring
1 1/2 c flour, sifted
1 tsp baking soda
1 tsp baking powder
3 very ripe bananas, mashed (about 1 - 1 1/8 c)
2/3 coarsely chopped walnuts

Preheat oven to 350º. Grease a 1-lb loaf pan with 1 tsp butter. In mixing bowl, stir together butter and sugar. Stir in the salt, eggs and vanilla. Sift in the flour, baking soda and baking powder, and stir in well. Stir in the bananas and walnuts. Pour into the prepared pan and bake for about 50 minutes. Check after 35 - 40 minutes, and if bread is brown, tent loosely with foil for the remaining baking time.
