In a bowl. mix and let stand:

1 cup of regular, plain Quaker oatmeal
1 1/2 Cups boiling water (use micro-wave to heat)

In another bowl, cream:

1 Cup brown sugar
1 Cup white sugar
2 eggs (or egg beaters)
1/2 Cups of margarine

Add above to the oatmeal mixture.

Add the following to the above mixture:

1 1/2 Cups flour
1 tsp. Baking soda
1 tsp. Cinnamon
pinch of salt
pinch of nutmeg (optional)

Directions:
Directions:
Bake 350 degrees in a long glass pan for 25-30 minutes. Just before the cake is ready to come out of the oven prepare the following:

Bring to a boil:

1 Cup brown sugar
1 Cup pecans
1 Can coconut
3/4 stick of margarine
3 Tbsp. milk

Spread on warm cake and place under the broiler until tops of coconut turn a little brown.
