6 egg whites
1 lb. confectioners sugar
1/4 tsp. lemon extract
1/2 lb. ground almonds
1/2 lb. ground hazelnuts (grind nuts separately)

Directions:
Directions:
Preheat oven to 275º.

Beat egg whites until stiff and dry. Slowly add sugar and continue beating until thick. Scoop out one cup of mixture; place in a second bowl and add lemon extract to it. Set aside.

Add ground nuts to the original mixture and drop by teaspoonfuls on to parchment lined baking pan. Make a small indentation on top of each mound and drop a small amount of the mixture with lemon extract to level each depression. Bake for 12 - 14 minutes.
