1 c. long grained rice
3 T. peanut oil
1 garlic clove, minced
4 scallions, chopped
3 c. mixed vegetables, diced
1 egg, beaten with pinch of salt
1 c. lettuce or bok choy, shredded
2 T. light soy sauce

pinch of sugar
salt and ground pepper
roasted cashews to garnish

Vegetables: mushrooms, peppers, broccoli, peas, snow peas, carrots, zucchini

Directions:

Rinse the rice in two to three changes of warm water to wash away starch. Drain well. Put rice in medium saucepan with 1 T. oil and 1 1/2 c. water. Cover and bring to a boil, stirring once. Cover and simmer for 12 - 15 minutes, until nearly all the water has been absorbed. Turn off the heat and let stand covered for 10 minutes. Fluff rice with a fork and let cool, uncovered. (Can prepare rice ahead of time, and keep in refrigerator up to three days.)

Heat the remaining 2 T. oil in the wok or frying pan, Ad the garlic and scallions and stir-fry for 30 seconds. Add chopped vegetables and stir fry for 2 - 3 minutes. Add the cooked rice and stir-fry for another 2 minutes. Make a well and pour in egg and stir-fry until just set. Stir in the lettuce, soy sauce, sugar and seasoning.

Transfer to a warmed serving bowl (220º oven for 15 minutes). Sprinkle with chopped, roasted cashews and serve immediately.
