For the Spinach and Artichokes:
6 canned artichoke hearts, drained and diced
3 Oz. Frozen Spinach, thawed and squeezed 'dry'
1 Clove Garlic, minced
2 T. Butter

For the Fondue:
3/4 c. Dry White Wine
3/4 C Water
2 t. Lemon Juice
1 T. Cornstarch
1 t. Ground Black Pepper
12 oz. Monterey Jack Cheese, Cubed
3 oz. Grated Parmesan Cheese
4 oz. Feta Cheese, crumbled.

Prepare Spinach and Artichokes: Saute butter over medium heat, add garlic, artichokes and spinach. Saute 2 minutes, set aside.
For the Fondue: Place all ingredients in blender in order listed. Start at low speed and increase to high until mixture is smooth. Pour into Fondue Pot, stir in Spinach and artichoke mixture.
For Dippers:
Cubed country French Bread, mushroom caps, steamed or grilled asparagus spears or steamed or grilled broccoli or cauliflower.

Original Recipe from Whole Food Recipes, a product of Vita-Mix. When prepared with a Vita Mix, Secure 2 part lid, Select Variable speed #1, Turn on machine and quickly increase speed to #10. Then on High 3-4 minutes until smooth and warm.
