4 large bunches collard greens
1/2 cup chopped onion
1/4 cup chopped carrots
1/4 cup bacon grease
2 cups chicken stock
salt and pepper to taste

Directions:
Directions:
Cut out the tough stem from each leaf and stack leaves. Roll each stack of leaves lengthwise and cut into ribbons. Cut the rolled ribbons crosswise.

Place cut collards into colander and rinse well with cold water.

Melt bacon grease in large Dutch oven over medium heat.

Add onions and carrots and saute until softened and lightly browned, about 5-10 minutes.

Increase heat to high and add collard greens and chicken stock and salt and pepper to taste.

Bring to a boil, reduce heat, cover and simmer for 30-45 minutes until tender.

Other greens such as kale or Swiss chard can be substituted for the collards. Cooking time may need to be reduced.
