2.5 lb boneless, skinless chicken thighs
flour for dredging
vegetable oil for frying
2 Tbsp garlic, chopped
2 tsp rosemary, chopped
2 Tbsp sherry vinegar
1/2 cup Sherry
3 cups chicken stock
1/4 cup Parmesan cheese

Directions:

Preheat oven to 350º.

Cut chicken into 1 inch cubes and dredge in flour.

Working in batches, brown chicken in vegetable oil over medium high heat until lightly browned (will not be cooked through).

Transfer browned chicken to large, shallow ovenproof casserole dish.

Add garlic and rosemary to drippings in pan and saute 1 minute.

Deglaze pan with sherry vinegar and Sherry.

Add chicken stock and bring to a boil. Add Parmesan cheese.

Pour pan sauce over chicken and bake until chicken browned on top and sauce is thickened and bubbly, about 30 minutes
