SALAD:

* 4 baby bok choy heads, cleaned
* 4 romaine leaves, chopped
* 1 cucumber, diced
* 2 carrots, shredded
* 1/2 cup cilantro, minced
* 1/4 cup green onions, minced
* toasted slivered almonds
* orange slices

DRESSING:

* 1/5 Tbsp. rice vinegar
* 2 Tbsp. low sodium soy sauce
* 1 Tbsp. canola oil
* 2 tsp. sesame oil
* 1.5 tsp. honey
* 1 tsp. grated ginger
* 2 cloves minced garlic
* zest of 1 orange

1) For the salad, separate the baby bok choy greens from the stems. Roughly chop the greens and mix in a salad bowl with chopped romaine leaves. Shred the stems in a food processor. Add to salad bowl with diced cucumber, shredded carrots, minced cilantro, and minced green onions. Top with orange slices, almonds, and protein (if using).

2) For the dressing, whisk all dressing ingredients together. Pour over salad and toss well. Let stand five minutes, then serve.
