In an unbaked pie shell (You can use Pillsbury fold-outs)

Mix in a bowl and pour into the piecrust:

3 Cups chopped (1 inch thick) fresh Rhubarb
1 Cup sugar
3 Tbsp. flour
Dash of salt

Directions:

Sprinkle the top with orange juice and dot with margarine. Place pie crust on top and flute the edges.

Bake 350 degrees for 30-45 minutes until the top pie is brown.

Rhubarb is a perennial plant that grows large and takes over a garden with its rich burgundy leaves and tall stalks. It's a beautiful sight to see and is a tangy treat.

Every time Dad hears the word Rhubarb, his mouth begins to water in great anticipation. This pie can be served with vanilla ice cream or fat-free yogurt. Our friend, Antonia Demas grew rhubarb every year in her garden; so there were lots of pies made that summer to Dad's delight to eat on a summer evening.
