2 c shredded raw zucchini (skin & all)
2 c sugar
1 c vegetable oil
3 c flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
3 eggs
1 tsp vanilla
1/4 tsp baking powder
1/2 tsp salt
1 tsp cloves
1 c walnuts

Directions:
Directions:
In mixing bowl combine sugar, oil, eggs, vanilla & shredded zucchini. Mix until blended. In med. bowl, sift flour, baking powder, baking soda, salt & spices. Add to mixture beating until well blended. Add chopped nuts.
Pour into 2 greased & floured 5x9 pans. Bake at 325º for about 1 hr or until bread tests down. Remove from oven and let stand 20 minutes before removing from pan.
