Ingredients:  
Ingredients:  
In a bowl, mix:

2 cups of grated carrots (or micro-waved mashed)
2 Cups of sugar
4 eggs (or egg beaters)
1 1/2 Cups of oil

Add:
2 Cups flour
1 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon, pinch of salt
Cream Cheese Filling Topping:

In a bowl with a mixer:

1 stick of margarine or butter
1 packages of cream cheese
1 box powdered sugar
2 tsp vanilla
1 cup of nuts (optional)

Directions:
Directions:
Bake at 350 degrees for 45 minutes or 1 hour in a sprayed for 35 minutes bundt pan or 2 loaf
pans, or until a knife comes clean when placing in the middle of cake. When taking out of oven,
turn over immediately on kitchen surface. If using a bundt pan...loosen the sides with a knife
first. Cool.

We usually have it at our July 4th get togethers at the Lake, or for special celebrations like Ian's Baptism.
