4 egg whites
1/4 tsp. cream of tartar
3/4 c. sugar
1/2 tsp. almond extract
dipping chocolate, or chocolate Hershey bar

Directions:
Mix egg whites and cream of tartar at high speed until soft peaks form. Sprinkle in sugar, two teaspoons at a time, beating well after each addition. Add almond extract and beat until stiff, glossy peaks form.

Preheat oven to 200º.
Spoon into pastry bag with large writing tip. On a parchment lined baking tray, make equal rounds (about 1 1/2" in diameter for tops) and upright meringue tips (for stems). Bake for 30 - 70 minutes. Begin checking at 30 minutes, but could take up to 70 minutes to bake. Cool.

Melt dipping chocolate or candy bar. With the tip of a knife, score a small hole in the underside of the mushroom top. Fill the hole with melted chocolate and insert stem piece. Let set and harden.

Depending on use and presentation, a very light dusting of sifted cocoa can be added across the top of the mushroom caps. Use on cookie trays, or as garnish with jelly roll cakes (i.e. log with mushrooms).
