2 bunches romaine, washed, torn in small pieces
2 avocados, dip in OJ to prevent browning
1 lg. can mandarin oranges
1 lb. bacon, cooked and drained
1 red onion, sliced
1 pkg. slivered almonds, caramelized in sugar
1 cucumber, seeded and sliced
2 pomegranates, seeds removed & saved

DRESSING
1/2 c. orange juice
1/4 c. oil
2 T. red wine vinegar
1 T. sugar
1 tsp. orange peel, grated
1/2 tsp. salt

Directions:

Put dressing ingredients in a blender and mix. Set aside until serving time.

To caramelize slivered almonds, heat 2 T. white sugar in a medium skillet. Add almonds and stir occasionally, until the sugar has liquefied and coated the almonds. Cool on wax paper and break apart before adding to the salad.

Mix all salad ingredients together, toss with dressing and garnish with toasted almonds and pomegranate seeds.
