In a bowl mix:

2 Cups flour
3 heaping tsp. baking powder
1/4 tsp. salt
2 eggs (egg beaters)
1/2 Cup vegetable oil
1 Cup non-fat yogurt
1 1/4 Cup non-fat milk

(Optional: In order to make a lighter batter; Fold in 2 stiffly beaten egg whites.)
Note: If batter is to thick add a little more milk.

Pour over sprayed teflon waffle-iron and bake according to directions.

Serve with strawberry or plain hot syrup that has been micro-waved in a small pitcher.

This recipe is also a favorite because you can cook the extra batter in the waffle iron; let cool; place it into a sandwich bag and use it later for a snack. Our little toddler
granddaughter, Madeline really enjoys them in the late mornings. We look forward to seeing Ian enjoy these waffles in a few months.
