French Onion Soup Recipe

2 sticks butter
16 vadalia onions, sliced
2 T. crushed garlic
8 cans beef broth
16 beef bouillon cubes
1/4 c. Worchestershire sauce
1 T. dried thyme
1/2 c. cognac

French bread, sliced 3/4" and toasted
Provolone cheese

Directions:
Directions:
1. In a very large stock pot, melt butter and saute onions until brown, about an hour.
2. Add garlic, beef broth, bouillon, Worchestershire and thyme and simmer 30 minutes.
3. Add cognac and ladle into crocks. Top with toasted French bread and provolone cheese.
4. Broil until cheese is lightly brown.
5. Makes 7 quarts.

I make this soup religiously every fall. It freezes very well in ziploc bags and you can keep provolone slices in the freezer as well. It makes for a great quick meal.
