1 lb sliced bacon, diced
4 c milk
2 pkgs (4.5 oz each) sliced dried beef, thin strips
16 eggs
1 c evaporated milk
1 can (4oz) sliced mushrooms, drained
¼ t salt
½ c flour
¼ c butter or margarine
1/8 t pepper
chopped fresh parsley, optional

Directions:
Directions:
In a large skillet, cook bacon until crisp. Remove bacon to paper towel to drain; discard all but ¼ c drippings. Add beef, mushrooms, four and pepper to the dripping; cook until thoroughly combined. Gradually add milk cook and stir until thickened. Stir in bacon; set a side. In large bowl, beat eggs; cook and stir gently until eggs are set. Place half of the eggs in a greased 9x13 pan; pour half the sauce over the eggs. Spoon on remaining eggs, then remaining sauce. Cover and bake at 300 for 45-50 minutes or until heated through. Let stand 5 minutes before serving. Garnish with parsley if desired.
