1 lb. penne (I used sml elbow macaroni)
3 T. unsalted butter
3 T. all purpose flour
2 c. 2% milk
1 T. onion flakes
2 tsp. mustard powder
1/4 tsp. salt
Pinch of cayenne pepper
1 bag (8 oz.) shredded Swiss cheese
8 oz. sharp cheddar cheese, shredded (2 c.)
4 oz. Gouda, shredded (1 c.)

1.) Heat oven to 350º. Coat a 2-qt.broiler-safe dish with nonstick spray. Bring a lg pot of lightly salted water to boiling. Add pasta; cook 11 mins. or as per pkg. directions. Drain.

2.) Meanwhile, melt butter in a med. saucepan over med-heat. Sprinkle with flour and cook, whisking, 1 min. Whisk in milk, onion flakes, mustard powder, salt and cayenne. Bring to a simmer over med-high heat. Reduce heat and simmer, whisking, 3 mins. Remove from heat.

3.) Toss cheeses together. Whisk 2 1/2 c. of the cheese into milk mixture until smooth. Stir sauce into pasta. Spoon half into prepared baking dish. Top with half of the remaining cheese. Repeat layering, ending with cheese.

4.) Bake at 350º for 20 mins. Increase heat to broil and broil 3 to 4 mins. until bubbly and browned.

This recipe is not for those of you that are counting your calories. This is a comfort food. My dad, when I was younger, made the best macaroni and cheese, and this, to me is almost like his was.
