1 package of white cake mix (plus ingredients to make cake)
1 tsp almond extract

Frosting & Filling
3/4 cup cold milk
1 package (3.3 oz) white chocolate instant pudding
1/4 cup powdered sugar
1 container (8 oz) cool whip
1/3 cup cherry or peach jam
1 cup sweetened flaked coconut

Directions:
Directions:
Preheat oven at 350º
Spray two 8 inch round pans
Mix cake as package directions and add almond extract with water
Bake for 25-30 mins
Cool cakes
For frosting: pour milk into bowl and add pudding mix and powdered sugar. Whisk 1-2 mins until the pudding is thick. Fold in cool whip

Assemble the cake, spread jam over bottom half of cake. Spread frosting mixture over the jam. Top with remaining layer. Spread sides and top of cake generously with frosting. Pat all over with coconut. Refrigerate for 1 hour
