6 slices bacon, chopped
1 onion chopped
1 green bell pepper, chopped
2 cloves garlic, minced
3 (28-ounce) cans baked beans, drained
3/4 cup ketchup
1/3 cup unsulfured molasses
1/3 cup firmly packed brown sugar
1/4 cup prepared mustard

1. Preheat oven to 350º. Spray a 13x9-inch baking dish with nonstick cooking spray.

2. In a medium skillet, cook bacon over medium heat until crisp. Remove bacon using a slotted spoon, and drain on paper towels. Reserve 2 tablespoons dripping in skillet: discard remaining drippings,

3. Add onion, bell pepper, and garlic to reserve drippings in skillet, and cook over medium heat for 6 to 8 minutes or until vegetables are tender.

4. In a large bowl, combine onion mixture, beans, ketchup,molasses,brown sugar, and mustard. Stir in bacon. Spoon mixture into prepared baking dish, and bake for 45 to 55 minutes or until hot and bubbly, Let stand 10 minutes before serving.
