1/3 cup plus 3 tablespoons vegetable oil, divided
1 cup all-purpose flour
1 cup yellow cornmeal
3 tablespoon sugar
2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 large egg, lightly beaten

Directions:

1. Preheat Oven to 400º. In a 10-inch cast-iron skillet, pour 3 tablespoons vegetable oil, and swirl skillet to coat bottom and sides. Place in oven, and heat until oil and skillet are hot.

2.In a medium bowl, combine flour,cornmeal,sugar,baking powder,salt,and baking soda. Add buttermilk, remaining 1/3 cup vegetable oil, and egg, stirring until combined. Pour mixture over hot oil in skillet.

3. Bake for 18 to 22 minutes or until a wooden pick inserted in center comes out clean. Cool in skillet for 5 minutes. Remove from skillet, and cool on a wire rack.
