1/4 cup butter
1 (8-ounce) package sliced baby bella mushrooms
1 cup chopped onion
2 pounds boneless top sirloin steak, cut into thin
strips
3 tablespoon all-purpose flour
1 1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 (14-ounce) can chicken broth
2 tablespoon Worcestershire sauce
1 tablespoon chopped fresh thyme
1/2 cup sour cream
Extra-wide egg noodles, cooked and kept warm
Garnish:fresh thyme

1. In a large skillet, melt butter over medium-high heat. Add mushrooms and onion:cook, stirring often, for 8 minutes or until onion soften and mushrooms release liquid. Remove mushroom mixture from skillet, and kept warm.

2. Add steak to skillet: cook, stirring occasionally, for 3 minutes or until browned on all sides. Add mushroom mixture to steak, sprinkle with flour, pepper, and salt: cook, starring occasionally, for 3 minutes.

3. Stir in chicken broth, Worcestershire sauce, and thyme. Cover, reduce heat to low, and cook 25 minutes. Uncover and cook for 35 minutes longer or until mixture is thickened and beef is tender. Remove from heat, and stir in sour cream. Serve over egg noodles, and garish with fresh thyme, if desired.

If fresh herbs aren't readily available, the standard fresh to dried substitution ratio is 3 to 1. So for this recipe, simply use 1 teaspoon dried thyme instead of 1 tablespoon chopped fresh thyme.
