Ingredients: 1 cup butter 2 cups sugar 1 teaspoon vanilla extract 3 cups cake flour 3 teaspoon baking powder 1/4 teaspoon salt 1 cup whole buttermilk 5 egg whites,beaten until stiff 3/4 cup chopped dried cranberries 3/4 cup chopped raisins 1/2 cup chopped figs 1/2 cup cup chopped pecans 2 tablespoons orange-flavored liqueur,such as Grand Marnier 1 recipe Fluffy Meringue Icing,divided (Recipe follows.) Directions:1.Preheat oven to 350º.Grease and flour 3(9-inch) round cake pans.
2.In a large bowl,beat butter and sugar at medium speed with an electric mixer until fluffy. Beat in vanilla and almond extract.
3.In a medium bowl, combine flour,baking powder,and salt:sift twice.
4.Gradually add flour mixture to butter mixture,alternately with buttermilk,beginning and ending with flour mixture.
5.Stir in one-fourth of egg whites to lighten. Fold in remaining egg whites. Spoon batter into prepared pans.
6.Bake for 20 20 22 minutes, or until a wooden pick inserted in center comes out clean. Let cool in center comes out clean. Let cool in pans for 10 minutes. Remove cake layers from pans and cool completely on wire racks. remaining icing on sides and In a medium bowl. combine cranberries,raisin,figs,pecans,and orange-flavored liqueur. Let stand for 20 minutes.
8.Add 2 cups Fluffy Meringue Icing to fruit mixture,starring to combine.Spread on sides and top of cake. Garnish with dried fruit, if desired.
