2 1/4 cups flour
1/2 tsp. salt
1 tsp. cream of tartar
1 cup salted butter, softened
1 cup brown sugar, packed
1 egg
1 tsp. vanilla
1 cup pecans, coarsely chopped
Directions:
Directions:
Preheat oven to 350º F. In medium bowl, stir together flour, salt and cream of tarter. Set aside. In a large bowl, beat butter and brown sugar together until light and fluffy. Beat in egg and vanilla. Blend in flour mixture and pecans. Form into 2 rolls 8" to 10" long. Wrap in plastic wrap and refrigerate until firm enough to slice. Onto lightly greased baking sheets place slices 1" apart. bake 8 to 10 minutes or until a light golden brown. Cool slightly on baking sheets before removing to wire racks. Makes 4 1/2 to 5 dozen.

For best results, keep refrigerated until you are ready to slice cookies. Using a sharp knife rotate a quarter turn of the cookie roll as you slice off cookies to maintain shape.
