1/2 c. margarine, 1/4 c. ricotta, 1 1/2 tsp. vanilla, 1 c. sugar, 1egg, 2 c. flour, 1/2 tsp. baking soda, 1/2 tsp. salt.

Directions:
Directions:
Preheat oven to 350º. Blend margarine and ricotta until creamy. Stir in vanilla. Gradually beat in sugar and then egg. Sift flour, baking soda and salt and stir into ricotta mixture. Drop the mixture by heaping teaspoons onto a greased cookie sheet. Bake 10 min. or until lightly browned.
