4 c. flour, 1 c. very fine sugar, 1/4 lb. lard at room temperature, 3 eggs, 3/4 tsp. anise seeds, 1 c. boiling water.

Directions:
Make a well of flour and sugar. Put eggs and lard in center of well and mix. Slowly add flour enlarging the well as you work in the flour. Boil water with anise seeds and add as flavor to blended dough. Knead and place dough in a large bowl. Let rest 20 min. before using in a pizelle iron. The dough should be of medium hard consistency. Pinch off a piece of dough and roll into a length about the size of your forefinger. Heat iron. Place dough in iron. It take about 1 min per side. Cool and stack and wrap in wax paper.
