3 lbs ground shoulder pork
3 lbs ground beef
6 Tbsp salt
Pepper to taste
6 medium onions, chopped and sauteed
2 cups medium pearl barley, cooked in 2 quarts of salted water
Pork Casing

Helps to have a meat grinder for this one.

Grind (or mix) together the two meats.

Combine all ingredients together until well mixed.

With a grinder: stuff into casings.

Without a grinder: make into patties. It isn't quite the same in patties.

May be frozen.

To cook, place on baking sheet covered with aluminum foil, and bake at 350º for 60-90 minutes (less if not frozen).

This is my Grandma Lawson's recipe. Korv was traditional Lawson Christmas brunch fare: with scrambled eggs, cookies and champagne it brings back lots of memories!
