2 c. sugar
1 c. butter or margarine
3 eggs beaten
1 c. buttermilk
1 tsp. soda
1 c. blackberry jam
1 c. nuts (English walnuts preferred we use pecans)
1 1/2 c. raisins
1 1/2 c. grated coconut (fresh preferred)
3 c. plain flour
1 T. allspice

Put nuts, raisins and coconut through food chopper or food processor, cream margarine and sugar, add eggs, soda, milk, flour and jam. Cook in 3 layers.
Oven 350.

Icing
Put 3 c. sugar, 2 tsp. margarine, 2 c. evaporated milk on to boil (use double boiler). When its boiling vigorously melt 3/4 c. sugar in small skillet pour it into other. Cook until it forms softball stirring constantly. Remove from heat. Add 1 cup grated coconut.

Mother's (Aunt Sue's) recipe from her book. It takes two people to do the icing so it was my job to melt the sugar and stir. We get together and make it every Christmas. It never turns out the same but Mother's didn't either. Never made a bad one and you always serve with boil custard.
