2 avocados, ripe
1/4 cup fat free sour cream or Greek Yogurt
Small Jalapeno pepper, minced and seeds removed
2TBL red onion, minced
2TBL cilantro, chopped
5TBL lime juice
Pepper
2TBL veg or canola oilt
2 lbs. catfish or tilapia
10" flour tortillas or tacos
2 small tomatoes
Bag of cabbage (used for coleslaw, any kind) or 1 small Napa cabbage
Hot sauce
Lime wedges
Cheese, shredded
Shredded lettuce

Directions:

Marinate fish in lime juice for about 20 minutes in the fridge. Before cooking, sprinkle with salt free herb seasoning, or pepper. Spread olive oil in a large saucepan, and start cooking the fish on both sides. As it cooks it will start to fall apart, use a flat wooden spoon to break up fish into small chunks.

Meanwhile, prepare guacamole. Add sour cream or yogurt, pepper, onion,cilantro, 3TBL lime juice, 1 small tomato. Put in fridge with saran wrap pressed on top. Toss cabbage with 2TBL oil, 2TBL lime juice, and pepper.

Assemble tortillas or tacos. Add cooked fish, guacamole, lettuce, cheese, cabbage, chopped tomatoes, hot sauce, lime wedges ~ however you like your tacos!

Serve with refried black or regular beans, or Mexican rice.
